Medium or medium rare. Most of my family does rare. It's not that I dont have the stomach for rare, I just don't like having to chew so much. Beef loses its texture and taste the longer you cook it, IMO.
Fav cut? Ribeye or Filet... its a tossup.
Fav steak house? Ruth Chris' - but I actually prefer prime rib; and for that, I love Lawry's Prime Rib.

Nope, I'm in Cali, and haven't been to NY since I was a lil kid. My cousin keeps mentioning it, though - he's been on a steak binge for the past few months. My dad actually makes really good steak, so I just go over to my parent's place to get my steak fix. I'd rank my dad's steak slightly below Ruth Chris', and a bit better than Flemming's & Mastro's. Some of my family would rank his higher than Ruth Chris'. I've been meaning to try Cut, but just haven't gotten around to it yet. I think a good steak as a lot to do with the quality of the meat.Ever try Peter Lugers? It's basically where Ruths Chris stole their method from, and IMO a bit better.
I'm also a medium rare guy, ribeye all the way.
Medium Rare all day long
