With current SSD's, you won't really notice the difference between RAID-0 vs a single drive, especially w/ day-to-day tasks.
Headache? I've been running RAID-0 SSD's for several years now, starting with the original OCZ Vertex1's - no headaches at all. I keep several backups of my arrays, in case anything goes down (both live and offline/offsite). Most of my arrays don't even have TRIM, just the onboard GC that runs every few months when I leave them at BIOS startup overnight.
As for which one? it's really up to you. If you're a hardware junky/speed demon, go RAID-0. If you're rich, RAID-0 two of those 512GB drives, lol.
